Pink Oatmeal with Apple Beet Ginger Purée
Ingredients
Apple beet purée
- 3 apples
- 1 small beet
- 1 teaspoon minced fresh ginger
Oatmeal
- 1 cup oat milk
- 1 cup water
- 1 cup rolled oats
- pinch of sea salt
- 1/2 teaspoon cardamom
Toppings
- Peanut butter
- Seeds and nut crust to taste
- Oat milk
Preparation
Blend the apples, beet, and minced ginger in a blender until smooth to make the purée and set aside.
Cook the oatmeal according to the package instructions using the oat milk, water, rolled oats, salt, and cardamom.
Stir in two-thirds of the apple beet purée into the cooked oatmeal.
Taste and add more spices if desired.
Portion the oatmeal into serving bowls.
Top with the remaining apple beet purée, peanut butter, seeds and nut crust of your choice, and a splash of oat milk.
Serve warm.
