Pumpkin Spice Fat Balls
Ingredients
- 1/3 cup raw pumpkin seeds
- 1/4 cup coconut butter
- 1 tbsp pumpkin purée (no sugar added)
- 2-3 tbsp nut milk (more if needed)
- 1 scoop protein powder of choice
- dash of vanilla
- few dashes pumpkin spice
- 2 tbsp raw cacao nibs
- Optional: vital proteins collagen
Chocolate glaze
- 2 tbsp raw cacao powder
- 1 tbsp almond butter
- 2 tbsp almond milk
Preparation
Blend all ball ingredients except cacao nibs until dough forms; add more milk if too dry.
Transfer to a bowl and mix in the cacao nibs.
Mix all glaze ingredients in a food processor until creamy.
Roll dough into balls.
Refrigerate for 10-20 minutes.
Spread glaze over the balls with a spatula.
Refrigerate again.
