Pumpkin Spice Fat Balls

Ingredients

  • 1/3 cup raw pumpkin seeds
  • 1/4 cup coconut butter
  • 1 tbsp pumpkin purée (no sugar added)
  • 2-3 tbsp nut milk (more if needed)
  • 1 scoop protein powder of choice
  • dash of vanilla
  • few dashes pumpkin spice
  • 2 tbsp raw cacao nibs
  • Optional: vital proteins collagen

Chocolate glaze

  • 2 tbsp raw cacao powder
  • 1 tbsp almond butter
  • 2 tbsp almond milk

Preparation

  1. Blend all ball ingredients except cacao nibs until dough forms; add more milk if too dry.

  2. Transfer to a bowl and mix in the cacao nibs.

  3. Mix all glaze ingredients in a food processor until creamy.

  4. Roll dough into balls.

  5. Refrigerate for 10-20 minutes.

  6. Spread glaze over the balls with a spatula.

  7. Refrigerate again.
