Raw Vegan Tropical Passion Fruit Slice

Ingredients

Base

  • 3/4 cup pecans
  • 1/4 cup cacao
  • 1 Tbsp coconut flour
  • 1/4 cup shredded coconut
  • 2 Tbsp bukinis
  • 1/2 cup dates, soaked
  • Pinch salt

Filling

  • 1 cup cashews, soaked for 4 hours
  • 1/4 cup rice malt syrup
  • 2 Tbsp tropicana powder
  • 1/2 cup coconut cream
  • 1 cup canned pineapple
  • 1/4 cup cacao butter, melted
  • Pinch salt

Topping

  • Fresh passion fruit

Preparation

  1. Bring together the first five base ingredients and blend in a food processor until evenly broken up.

  2. Add the soaked dates and blend again until completely combined. The mixture should be sticky and hold together. Press the mixture into the chosen cake tin.

  3. Melt the cacao butter over a hot water bath in a bowl over a saucepan with hot water. Set aside to cool once melted.

  4. Combine all filling ingredients except the cacao butter in a blender and blend until completely smooth. Add the cacao butter and blend again. Pour the mixture over the base and set in the freezer.

  5. Top with fresh passion fruit for serving.
