Raw Tropical Passion Fruit Slice

Ingredients

Base

  • 3/4 cup pecans
  • 1/4 cup cacao
  • 1 Tbsp coconut flour
  • 1/4 cup shredded coconut
  • 2 Tbsp bukinis
  • 1/2 cup dates, soaked
  • Pinch salt

Filling

  • 1 cup cashews, soaked for 4 hours
  • 1/4 cup rice malt syrup
  • 2 Tbsp tropicana powder
  • 1/2 cup coconut cream
  • 1 cup canned pineapple
  • 1/4 cup cacao butter, melted
  • Pinch salt

Topping

  • Fresh passion fruit

Preparation

  1. Bring together your first 5 base ingredients and blend in a food processor until evenly broken up

  2. Add in your soaked dates and blend again until completely combined. Your mixture should be sticky between your fingers and hold together. Press your mixture into your chosen cake tin

  3. Melt your cacao butter over a hot water bath in a bowl over a saucepan with hot water. Set aside to cool once melted

  4. Combine all of your filling ingredients except for the cacao butter in a blender and blend until completely smooth. Add in your cacao butter and blend again. Pour your mixture over the base and set in the freezer

  5. Top with fresh passion fruit for serving. Enjoy!
