Raw Tropical Passion Fruit Slice

Ingredients

  • BASE
  • 3/4 cup pecans
  • 1/4 cup cacao
  • 1 Tbsp coconut flour
  • 1/4 cup shredded coconut
  • 2 Tbsp bukinis
  • 1/2 cup dates, soaked
  • Pinch salt
  • FILLING
  • 1 cup cashews, soaked for 4 hours
  • 1/4 cup rice malt syrup
  • 2 Tbsp tropicana powder (freeze dried and powdered fruit- pineapple, passionfruit- use whatever you can find). 1/2 cup coconut cream
  • 1 cup canned pineapple
  • 1/4 cup cacao butter, melted
  • Pinch salt
  • Fresh passion fruit for topping

Preparation

  1. Bring together your first 5 base ingredients and blend in a food processor until evenly broken up

  2. Add in your soaked dates and blend again until completely combined. Your mixture should be sticky between your fingers & hold together. Press your mixture into your chosen cake tin

  3. Melt your cacao butter over a hot water bath (in a bowl over a saucepan with hot water) Set aside to cool once melted

  4. Combine all of your filling ingredients except for the cacao butter in a blender & blend until completely smooth, add in your cacao butter & blend again. Pour your mixture over the base and set in the freezer

  5. Top with fresh passion fruit for serving
