Raw Tropical Passion Fruit Slice
Ingredients
- BASE
- 3/4 cup pecans
- 1/4 cup cacao
- 1 Tbsp coconut flour
- 1/4 cup shredded coconut
- 2 Tbsp bukinis
- 1/2 cup dates, soaked
- Pinch salt
- FILLING
- 1 cup cashews, soaked for 4 hours
- 1/4 cup rice malt syrup
- 2 Tbsp tropicana powder (freeze dried and powdered fruit- pineapple, passionfruit- use whatever you can find). 1/2 cup coconut cream
- 1 cup canned pineapple
- 1/4 cup cacao butter, melted
- Pinch salt
- Fresh passion fruit for topping
Preparation
Bring together your first 5 base ingredients and blend in a food processor until evenly broken up
Add in your soaked dates and blend again until completely combined. Your mixture should be sticky between your fingers & hold together. Press your mixture into your chosen cake tin
Melt your cacao butter over a hot water bath (in a bowl over a saucepan with hot water) Set aside to cool once melted
Combine all of your filling ingredients except for the cacao butter in a blender & blend until completely smooth, add in your cacao butter & blend again. Pour your mixture over the base and set in the freezer
Top with fresh passion fruit for serving
