Raw Zucchini Mousse Dessert
Ingredients
- 630g zucchini
- 30g lemon juice (or 20g lemon juice and 10g yuzu juice)
- 65g white almond butter
- 4 tablespoons maple syrup (or agave)
- 4-5 tablespoons coconut oil
- 1 teaspoon matcha powder
Preparation
If you use green zucchini, peel them; if you use white or yellow ones, keep the peel but wash them first
In a blender, add all the ingredients together and remove the top cap to allow air to pass through
Blend on high speed for 5-6 minutes
Pour into individual bowls
Refrigerate for 12 hours or overnight
Serve and enjoy
