Raw Zucchini Mousse Dessert

Ingredients

  • 630g zucchini
  • 30g lemon juice (or 20g lemon juice and 10g yuzu juice)
  • 65g white almond butter
  • 4 tablespoons maple syrup (or agave)
  • 4-5 tablespoons coconut oil
  • 1 teaspoon matcha powder

Preparation

  1. If you use green zucchini, peel them; if you use white or yellow ones, keep the peel but wash them first

  2. In a blender, add all the ingredients together and remove the top cap to allow air to pass through

  3. Blend on high speed for 5-6 minutes

  4. Pour into individual bowls

  5. Refrigerate for 12 hours or overnight

  6. Serve and enjoy
