Roasted Brussels Sprouts with Hummus Dressing

Ingredients

  • 1 to 2 lbs Brussels Sprouts
  • 1/2 tbsp Grape seed Oil
  • 2 tsp Garlic Powder
  • 2 tsp Onion Powder

Hummus dressing

  • 3 tbsp oil free hummus
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • hot water (if necessary)

Preparation

  1. Preheat oven to 450 degrees F.

  2. Wash Brussels sprouts and slice them in half.

  3. Move to a bowl and drizzle with grape seed oil and seasonings.

  4. Mix together until thoroughly coated.

  5. Place on a baking tray with parchment paper and bake for around 25 to 30 minutes.

  6. Bake longer for extra crispiness, but be careful not to burn.

  7. Mix the hummus dressing ingredients until creamy.

  8. If the dressing is too thick, add a little hot water until you get a creamy consistency.

  9. Serve the roasted Brussels sprouts with the hummus dressing.
