Roasted Garlic Cashew Cream Pasta

Ingredients

  • 1 bulb garlic, top sliced off
  • 1 1/2 cups cashews, soaked for 6-24 hours
  • 1 1/2 cups vegetable broth
  • 1 cup spinach
  • 1 bunch parsley
  • juice from 1/2 lemon
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 box of your favorite cooked pasta

Preparation

  1. Preheat oven to 400 degrees.

  2. Add garlic to a baking dish and roast for 40 minutes.

  3. Once garlic is done roasting, remove it from the bulb and add it to a blender with the rest of your sauce ingredients. Blend until smooth.

  4. Toss sauce with cooked pasta and serve.

Tips

  1. Blending vegetables into pasta sauce is a great way to sneak in more veggies.
