Roasted Kabocha Squash Soup Delight

Ingredients

  • 1 kabocha squash
  • 2 carrots
  • 1 yellow onion
  • 1 tbsp chosen foods oil
  • 1/4 cup kitehill foods unsweetened almond yogurt
  • 2 cups veggie broth
  • 1 tsp cumin
  • radish
  • trader joes everything but the bagel seasoning
  • dill
  • nut yogurt
  • roasted chickpeas

Preparation

  1. Roast the kabocha squash until tender.

  2. Sauté the carrots and yellow onion in 1 tbsp of chosen foods oil until soft.

  3. In a blender, combine the roasted kabocha squash, sautéed vegetables, 1/4 cup almond yogurt, 2 cups veggie broth, and 1 tsp cumin; blend until smooth.

  4. Serve the soup topped with radish, everything but the bagel seasoning, dill, nut yogurt, and roasted chickpeas.
