Roasted Kabocha Squash Soup Delight
Ingredients
- 1 kabocha squash
- 2 carrots
- 1 yellow onion
- 1 tbsp chosen foods oil
- 1/4 cup kitehill foods unsweetened almond yogurt
- 2 cups veggie broth
- 1 tsp cumin
- radish
- trader joes everything but the bagel seasoning
- dill
- nut yogurt
- roasted chickpeas
Preparation
Roast the kabocha squash until tender.
Sauté the carrots and yellow onion in 1 tbsp of chosen foods oil until soft.
In a blender, combine the roasted kabocha squash, sautéed vegetables, 1/4 cup almond yogurt, 2 cups veggie broth, and 1 tsp cumin; blend until smooth.
Serve the soup topped with radish, everything but the bagel seasoning, dill, nut yogurt, and roasted chickpeas.
