Stuffed Zucchini with Tuna and Nuts

Ingredients

  • 4 medium zucchinis
  • 1 can of tuna (150g)
  • Olive oil
  • 1/2 cup Parmesan cheese
  • 1 medium onion
  • 1 or 2 garlic cloves
  • Chopped walnuts
  • Salt and pepper

Preparation

  1. Blanch the zucchinis for 10 minutes, drain and cool them. Cut in half lengthwise and remove the pulp, reserving it.

  2. Sauté the onion and garlic, add the zucchini pulp, salt, and pepper. Then mix this with the tuna and chopped nuts.

  3. Stuff the zucchini halves, top with Parmesan cheese, and bake for 20 to 25 minutes at 200°C until golden brown.
