Sweet Potato Breakfast Muffins

Ingredients

  • wet
  • 1 large sweet potato
  • 2 small bananas, mashed
  • 1 tsp vanilla extract
  • dry
  • 1 cup gluten free flour
  • 1/2 cup oats
  • 1 tsp cinnamon
  • 1 tbsp flaxseed
  • 1 tsp baking powder
  • pinch of nutmeg
  • pinch of ginger
  • handful of chopped pecans

Preparation

  1. Bake your sweet potato in the oven (400F) for 30-40 minutes until completely soft - remove the skin and mash

  2. Mix in the rest of your wet ingredients then fold in the dry! Once everything is fully combined distribute to the greased or lined muffin tins
