Incredible Homemade Vegan Cookies

Ingredients

  • 1 cup oats
  • 2 tablespoons coconut oil
  • 1/4 cup coconut sugar
  • 1/2 cup almond milk
  • 1/4 cup buckwheat flour
  • 1 teaspoon baking powder
  • 1 tablespoon flaxseed
  • 1/2 cup chocolate chips
  • 1 dash lemon juice
  • 1 dash cinnamon
  • 1 dash nutmeg
  • 1 teaspoon vanilla extract
  • salted caramel flavoring
  • 1 scoop vanilla protein

Preparation

  1. Preheat the oven to 200 degrees Celsius

  2. Blend the oats in a blender to make it a flour.

  3. Add the rest of the dry ingredients to the flour in a mixing bowl.

  4. In a separate bowl, mix the wet ingredients, making sure the oil is melted.

  5. Let the flaxseed sit in the wet ingredients mixture for 5 minutes.

  6. Transfer the wet ingredients into the dry and start mixing until a thick dough texture is achieved; add extra almond milk if needed.

  7. Shape the dough into cookies of the desired size.

  8. Put in the oven for 12 minutes at 200 degrees.
