Vegan Protein Chocolate Chip Cookies

Ingredients

  • 1 scoop vanilla vegan protein
  • 1 cup oats
  • 2 tablespoons coconut oil
  • 1/4 cup coconut sugar
  • 1/2 cup almond milk
  • 1/4 cup buckwheat flour
  • 1 teaspoon baking powder
  • 1 tablespoon flaxseed
  • 1/2 cup chocolate chips
  • 1 dash lemon juice, cinnamon, and nutmeg
  • 1 teaspoon vanilla extract and salted caramel flavoring

Preparation

  1. Blend the oats in a blender to make it a flour, add the rest of the dry ingredients to the flour in a mixing bowl

  2. In a separate bowl mix the wet ingredients, making sure the oil is melted

  3. Let the flaxseed sit in the wet ingredients mixture for 5 minutes and then transfer the wet into the dry and start mixing

  4. It should be a thick dough texture, add extra almond milk if needed

  5. Shape into cookie to the size you’d like and put in the oven for 12 minutes at 200 degrees

  6. Enjoy
