Vegan Protein Chocolate Chip Cookies
Ingredients
- 1 scoop vanilla vegan protein
- 1 cup oats
- 2 tablespoons coconut oil
- 1/4 cup coconut sugar
- 1/2 cup almond milk
- 1/4 cup buckwheat flour
- 1 teaspoon baking powder
- 1 tablespoon flaxseed
- 1/2 cup chocolate chips
- 1 dash lemon juice, cinnamon, and nutmeg
- 1 teaspoon vanilla extract and salted caramel flavoring
Preparation
Blend the oats in a blender to make it a flour, add the rest of the dry ingredients to the flour in a mixing bowl
In a separate bowl mix the wet ingredients, making sure the oil is melted
Let the flaxseed sit in the wet ingredients mixture for 5 minutes and then transfer the wet into the dry and start mixing
It should be a thick dough texture, add extra almond milk if needed
Shape into cookie to the size you’d like and put in the oven for 12 minutes at 200 degrees
