Healthy Vegan Sweet Potato Donuts
Ingredients
- 1 cup sweet potato (peeled and mashed - you can roast with aluminum foil or boil)
- 2 Tbsp flax seeds with 6 Tbsp water (soaked for 5min)
- 1/4 cup nut milk or coconut milk
- 1/3 cup maple syrup
- 2 Tbsp coconut oil
- 2 tsp vanilla extract
- 1 cup almond flour
- 1/2 cup rice or buckwheat flour
- 2 Tbsp coconut flour
- 1 Tbsp coconut sugar
- 1 Tbsp baking powder
- Pinch sea salt
- Pinch cinnamon and nutmeg
Icing
- 3 Tbsp melted coconut butter
- 3 Tbsp tahine
- 1 1/2 Tbsp powdered xylitol
- 2 1/2 Tbsp warm water
Preparation
Mix the wet ingredients and dry ingredients in different bowls. Then combine wet into dry.
Spray the donut pan with coconut oil and pour the batter, spreading with a spoon.
Bake at 350F for 15-20 minutes or until a toothpick comes out clean.
Cool in a resting tray and then add the icing.
Refrigerate in an airtight container or freeze for months.
Icing
Mix all the ingredients until very smooth.
For coloring, add options like 1 tsp turmeric, 1-2 tsp blue spirulina, 1-2 tsp pitaya powder, or 1 tsp matcha.
Alternatively, add cacao hazelnut spread over the donuts.
