Turmeric Carrot Smoothie Bowl
Ingredients
- 1/4 C coconut milk
- 2 carrots
- 1 C frozen mango
- 1 TBSP fresh ginger
- 1 tsp fresh or powdered turmeric
- 1 lemon, juiced
- 1 frozen banana
- 1 scoop plant based vanilla protein powder (optional)
- pinch of salt
Toppings
- pineapple
- goji berries
- unsweetened coconut flakes
- golden flaxseed
Preparation
Place bowl in freezer to chill. This helps prevent melting!
Add all ingredients to a high speed blender or food processor. Purée until smooth, thick, and creamy, stopping to scrape down occasionally and adding more liquid if needed.
Transfer to chilled bowl and add toppings of choice!
