Mango Turmeric Sunshine Smoothie Bowl

Ingredients

  • 1/2 - 2 C coconut milk (do a 1/2 C for a suuuuper thick smoothie bowl and 2 C for a thin drinkable smoothie)
  • 1 C frozen mango
  • 1 C frozen cauliflower rice
  • 1/2 tsp ground or 1 tsp fresh turmeric
  • 1 lime, juiced
  • 1 medjool date
  • pinch of salt
  • 1 scoop plant based vanilla protein powder

Toppings

  • sliced kiwi
  • unsweetened coconut flakes
  • goji berries
  • fresh mango

Preparation

  1. Place your bowl in the freezer to chill.

  2. Add all ingredients to a high speed blender and purée until creamy, using the tamper to mix if it’s too thick.

  3. Pour into bowl and top with toppings.

Notes

  1. This smoothie is light but filling, easy to consume on the go, quick to make, and loaded with fruits, veggies, and superfoods.
