Vegan Creamy Cucumber Salad Sandwich

Ingredients

Salad base

  • 1/3 cup thinly sliced cucumber
  • 1/4 cup finely diced carrots
  • 1 finely chopped date
  • 1 tablespoon sliced almonds

Dressing

  • 3 tablespoons almond milk yogurt or plant-based yogurt
  • 1 teaspoon mayonnaise (optional)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon kosher salt, pepper, garlic powder, and oregano
  • 1 tablespoon finely chopped fresh dill

Preparation

  1. Mix cucumber, carrots, date, and almonds in a bowl

  2. Whisk together yogurt, mayonnaise (if using), lemon juice, salt, pepper, garlic powder, oregano, and dill in a separate bowl

  3. Pour dressing over salad base and toss to coat

Sandwich assembly

  1. Toast the bread

  2. Spread hummus on the toasted bread

  3. Top with greens, sliced tomato, and creamy cucumber salad
