Vegan Jackfruit Pulled Chicken Sandwich

Ingredients

  • 2 cans young green jackfruit in brine
  • 1 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon black pepper
  • Salt to taste

For serving

  • 4 whole wheat hamburger buns
  • Pickles and coleslaw

Preparation

  1. Drain and rinse the jackfruit, then shred it and discard any tough core pieces

  2. Heat olive oil in a skillet over medium heat and sauté the diced onion and minced garlic until soft

  3. Add the shredded jackfruit, smoked paprika, chili powder, cumin, black pepper, and salt; cook until the jackfruit starts to pull apart

  4. Stir in the BBQ sauce and simmer until the mixture is heated through and tender

  5. Toast the hamburger buns

  6. Serve the jackfruit mixture on the buns topped with pickles and coleslaw
