Veggie Noodles with Peanut Butter Sauce
Ingredients
- 300g (10oz) noodles
- 1 tablespoon olive oil
- 1 green pepper
- 1 red pepper
- 1 yellow pepper
- 1 red onion
- 1/3 cup white sesame seeds
- fresh oregano
- 1/3 cup soy sauce
- 1 tablespoon Huy Fong Sriracha Chili Sauce
- 1 tablespoon peanut butter
- handful mushrooms
Preparation
Pour 1 tablespoon olive oil in a wok over medium heat.
While the oil is warming, chop the onion, green pepper, red pepper, yellow pepper, and mushrooms.
Cook the onion in the hot oil over medium heat for 5 minutes until soft.
Add the chopped green, red, and yellow peppers and mushrooms, and sauté until slightly golden and soft.
Cook the noodles in a pot of boiling water according to package directions.
In a bowl, combine 1/3 cup soy sauce, 1 tablespoon Sriracha chili sauce, and 1 tablespoon peanut butter.
Mix the sauce until smooth.
Add the cooked noodles and sauce to the wok with the vegetables, stir to combine, and cook for 5 minutes over high heat.
Sprinkle with sesame seeds and fresh oregano.
