Viral Hummus Pasta with Vegetables

Ingredients

  • 200g spaghetti
  • 1 tablespoon olive oil
  • 1 onion
  • 200g mushrooms
  • 2 garlic cloves
  • Handful spinach
  • 125g hummus
  • 1 lemon
  • Pinch chilli flakes, optional

Preparation

  1. Cook the spaghetti in a big pan of boiling water to the packet instructions and drain, reserving a mug of the pasta water.

  2. Meanwhile in a large frying pan add the oil, onion, and mushrooms over a medium heat for 10 minutes until all the liquid from the mushrooms has evaporated and the onion is soft.

  3. Tip in the garlic and fry for 30 seconds until fragrant.

  4. Add the spinach and cook until wilted.

  5. Mix the hummus with the lemon zest and juice, and some reserved pasta water to create a sauce.

  6. Combine the sauce with the vegetables and cooked spaghetti in the pan, add chilli flakes if using, and heat through before serving.
