Sweet Potato Burrito Bowl

Ingredients

  • 1/2 sweet potato
  • 1/2 cup black beans
  • 1/2 cup corn kernels
  • 1/2 cup cherry tomatoes
  • 1/2 jalapeno, diced
  • cilantro and salsa (optional)

Sweet potato preparation

  • 3 medium sweet potatoes
  • 1-2 tablespoons olive oil
  • 2 teaspoons cumin powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne powder
  • salt and pepper to taste

Preparation

  1. Preheat the oven to 400°F or use the air fryer option.

  2. Dice the potatoes into even pieces as much as possible.

  3. Add the sweet potato cubes to a large bowl and add olive oil to coat evenly throughout.

  4. Add all spices and seasonings and incorporate well until all sweet potato cubes are seasoned well.

  5. Add to oven and bake for 20 minutes flipping them halfway throughout or air fry at 390°F for 15 minutes.

  6. Add to bowl and enjoy.
