Vegan Cheesy High-Protein Pasta

Ingredients

Cheesy green sauce

  • 2 Large Handfuls of Spinach
  • 1 Cup Frozen Peas
  • 1/2 Cup Cashews (Soaked in hot water for 10 minutes and drained)
  • 1 Cup Oat Milk (Add more if needed)
  • 1/4 Cup Nutritional Yeast
  • 1 Tbsp Tahini
  • 1 Tbsp Lemon Juice
  • 1 Clove Garlic
  • 1/4 Tsp Smoked Paprika
  • Pinch of Salt and Pepper

Pasta components

  • 400g Pasta of Choice
  • Chilli Flakes
  • Hemp Seeds
  • Fresh Parsley

Preparation

  1. Heat a fry pan over medium heat and add frozen peas. Cook for a few minutes or until defrosted. Add spinach and stir until wilted. Remove from heat.

  2. Add peas and spinach into a blender with all other sauce ingredients and blend until smooth. Consistency should be thick but pourable. Add more oat milk if needed.

  3. Cook pasta according to package instructions. Drain and stir in the sauce whilst the pasta is still hot.

  4. Serve and garnish with chilli flakes, hemp seeds and parsley.

Tips

  1. Store in the fridge for 4-5 days. Serves 4-5 people.
