Crispy Vegan Mushrooms in Chilli Sauce

Ingredients

  • 200g button mushrooms
  • 1 green chili
  • 3 spring onions
  • 1/2 tablespoon ginger
  • 1 pepper
  • 1.5 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 0.5-1 tablespoon chili sauce
  • 0.5 tablespoon cornflour
  • 1-1 teaspoon pepper
  • 1 tablespoon water
  • 2 tablespoons water
  • 1/2 cup water
  • Sesame oil
  • Salt to taste

Batter

  • 3 tablespoons cornflour
  • 1.5 tablespoons flour
  • 1 teaspoon chili powder
  • 1 teaspoon ginger powder
  • 1 teaspoon salt
  • Up to 1/4 cup water

Preparation

  1. Make a thick batter with all the listed ingredients for the batter. Add mushrooms and leave to marinate for 20 minutes. Deep fry in hot oil and keep aside.

  2. Heat sesame oil in a pan and add green chili, spring onions, ginger and peppers. Stir fry and add tomato paste, soy sauce, chili sauce and 2 tablespoons water.

  3. Make a mixture of cornflour and 1 tablespoon water and add it to the pan. Add pepper and salt and cook for a few minutes. Add 1/2 cup water and bring to a simmer.

  4. Mix in fried mushrooms and garnish with spring greens.
