Double Berry Muffin Baked Oatmeal

Ingredients

  • 80 g oat flour
  • 10 g flax flour or grounded flaxseeds
  • 10 g chia seeds
  • 100 ml milk of choice/water
  • 1 mashed banana (around 100 g)
  • innamon and baking powder (a pinch of each)
  • small handful of blueberries and strawberries (cut into smaller pieces) each

Preparation

  1. Mix all of the ingredients except for the berries

  2. Give it a good stir and then add them in

  3. Scoop the batter in a small oven proof ramekin (you can put a little bit of oil around its walls, so that the muffin doesn't stick)

  4. Put some more berries on top

  5. Bake at 180C for around 25-30 minutes until it is cake-like
