Egg Avocado Sweet Potato Breakfast Bowl

Ingredients

  • 1 egg
  • ghee
  • everything but the bagel seasoning
  • 1/2 avocado
  • Japanese sweet potato
  • watermelon
  • blueberries

Preparation

  1. Fry one egg in ghee and top with everything but the bagel seasoning.

  2. Bake Japanese sweet potato at 400F for 45 minutes, then turn off the oven and leave it in for another 45 minutes.

  3. Assemble the bowl with the fried egg, half avocado, baked sweet potato, watermelon, and blueberries.
