Kiwi Breakfast Tart

Ingredients

  • 100 g mixed nuts (almonds, walnuts, hazelnuts etc)
  • 50 g coconut flakes
  • 2 tbsp coconut oil melted
  • 1 tbsp maple syrup
  • pinch of salt
  • yoghurt of your choice
  • kiwis for topping

Preparation

  1. Preheat the oven to 175c (350f)

  2. Add the nuts, oats and coconut to a food processor and mix until you have a coarse flour texture

  3. Then add the rest of the ingredients and process until it has a wet sand consistency

  4. Add a little water if necessary for it to come together

  5. Line the bottom of a small tart pan with removable bottom with parchment paper

  6. Press the crust mixture in an even layer and up the edges

  7. Bake for 10 minutes, until fragrant and slightly golden on the edges

  8. Let it cool down and fill with yoghurt and top with sliced kiwi

  9. Serve immediately since the crust will get soft as it sits

  10. Enjoy
