Crispy Baked Smashed Potatoes

Ingredients

  • 1 kg small potatoes
  • Olive oil
  • Sea salt

Optional toppings

  • Vegan pesto
  • Parsley

  • Asparagus
  • Tahini

Preparation

  1. Bring water to a boil, add the cleaned potatoes and cook them for about 25-30 minutes until they are soft, using a knife or fork test.

  2. Preheat the oven to 220 degrees Celsius, place the cooked potatoes on a baking tray, smash them with a potato masher or a bowl, drizzle with olive oil, sprinkle with sea salt, and bake for about 30 minutes until crispy and lightly browned.

  3. Place the potatoes on a plate and top with desired toppings, such as vegan pesto and parsley.

  1. Steam the asparagus until tender

  2. Drizzle with tahini before serving
