Celeriac & Apple Soup

Ingredients

  • 2 leeks
  • 1 red onion
  • 3 apples
  • 2 bay leaves
  • 3 cloves of garlic
  • 1 celeriac- peeled & chopped
  • 1 x 250ml coconut cream
  • 1 tsp of Veg stock

Preparation

  1. Heat rapeseed oil in a large pan, soften onions, leeks, garlic

  2. Add apples and celeriac

  3. Add stock and coconut cream and 400ml of boiled water

  4. Bring to a boil, stir well, reduce to a simmer and then cook until veg is soft

  5. Blend with blender stick, you may wish to add more boiled water to thin the soup. Then eat gorgeously hot
