Celeriac & Apple Soup
Ingredients
- 2 leeks
- 1 red onion
- 3 apples
- 2 bay leaves
- 3 cloves of garlic
- 1 celeriac- peeled & chopped
- 1 x 250ml coconut cream
- 1 tsp of Veg stock
Preparation
Heat rapeseed oil in a large pan, soften onions, leeks, garlic
Add apples and celeriac
Add stock and coconut cream and 400ml of boiled water
Bring to a boil, stir well, reduce to a simmer and then cook until veg is soft
Blend with blender stick, you may wish to add more boiled water to thin the soup. Then eat gorgeously hot
