Easter Avocado Chocolate Eggs

Ingredients

  • 2 avocados (split in half - save the skins)
  • 1/4 cup date syrup or maple syrup
  • pink salt
  • 1 cup vegan chocolate chips (or use half dark and half white)
  • avocado oil (for greasing)

Preparation

  1. Melt the vegan chocolate chips, melting dark and white chocolate separately if using both.

  2. Wash the avocado skins, pat them dry, and lightly grease with avocado oil using a paper towel.

  3. Pour a thin layer of melted chocolate into each avocado skin half and refrigerate until firm.

  4. Repeat the process of pouring melted chocolate and refrigerating to build a thicker shell.

  5. Mix the avocado flesh with 1/4 cup date syrup or maple syrup, pink salt, and leftover melted chocolate (about 1/2 cup).

  6. If using white and dark chocolate, divide the avocado mixture and mix each part with 1/4 cup of the respective melted chocolate.

  7. Fill the chocolate shells with the ganache mixture and refrigerate again until set.

  8. Carefully cut the avocado skin slightly with a knife and peel it off to reveal the chocolate egg.
