Spring Bounty Bars with Berries

Ingredients

  • 2 cups shredded coconut
  • 1 cup fresh blackberries (or any berry)
  • 1/4 cup coconut oil (or nut butter, but the color won’t be as bright)
  • Pinch of salt
  • 1 cup dark chocolate, melted

Preparation

  1. Puree the blackberries until smooth (if you don’t have a high speed blender, use blueberries to avoid seeds).

  2. Mix coconut, coconut oil, berry puree, and salt.

  3. Press firmly into a lined pan.

  4. Freeze for at least 30 minutes.

  5. Cut into bars.

  6. Coat in melted chocolate.

  7. Refrigerate until set, then eat.
