Spring Bounty Bars with Berries
Ingredients
- 2 cups shredded coconut
- 1 cup fresh blackberries (or any berry)
- 1/4 cup coconut oil (or nut butter, but the color won’t be as bright)
- Pinch of salt
- 1 cup dark chocolate, melted
Preparation
Puree the blackberries until smooth (if you don’t have a high speed blender, use blueberries to avoid seeds).
Mix coconut, coconut oil, berry puree, and salt.
Press firmly into a lined pan.
Freeze for at least 30 minutes.
Cut into bars.
Coat in melted chocolate.
Refrigerate until set, then eat.
