Vegan Pumpkin Spice Latte

Ingredients

  • 2 cups unsweetened almond milk
  • 2 tablespoons pumpkin puree
  • 2 tablespoons maple syrup
  • 2 teaspoons pumpkin spice mix
  • 1/2 teaspoon vanilla extract
  • 2 shots espresso or 1 cup strong brewed coffee
  • Whipped coconut cream (optional)
  • Cinnamon for garnish

Preparation

  1. Brew the espresso or strong coffee.

  2. In a saucepan, combine almond milk, pumpkin puree, maple syrup, pumpkin spice mix, and vanilla extract.

  3. Heat the mixture over medium heat, whisking until smooth and hot, but do not boil.

  4. Pour the heated pumpkin mixture over the brewed coffee.

  5. Top with whipped coconut cream and a sprinkle of cinnamon if desired.
