Game Day Guacamole Cups

Ingredients

  • 3 large ripe Haas avocados
  • 1 lime, juiced
  • 2 garlic cloves, minced
  • 1 jalapeno, minced
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1 plum tomatoes, diced
  • Himalayan Salt and pepper, to taste
  • 3 - 4 large english cucumbers

Preparation

  1. Cut the avocados in half, remove the pit, and scoop the flesh out with a spoon

  2. Place the avocado flesh in medium bowl and pour the lime juice over the top

  3. Use a spoon and fork to mash the avocado until mostly smooth

  4. Smell your jalapeño to test the heat

  5. You can usually tell if you got a spicy one

  6. Stir in the garlic, jalapeño (half or all), green onions and cilantro

  7. Salt and pepper to taste

  8. Stir in the diced tomato at the very end

  9. Cucumber cups: ??Wash and slice cucumber into 2 inch slices

  10. Scoop out inside with mini scooper or knife or spoon

  11. Fill inside with guacamole (you can cut a corner of a sandwich bag and use it as a piping bag) ??Sprinkle with chili powder and enjoy
