Easy Loaded Cauliflower Snack for Game Day

Ingredients

  • 1 small head cauliflower
  • 2 teaspoons coconut oil (or butter or oil of choice)
  • paprika
  • garlic
  • salt
  • pepper

Toppings

  • cheese
  • black beans
  • tomatoes
  • salsa
  • avocado
  • cilantro
  • green onions
  • jalapeño
  • pickled onions

Preparation

  1. Slice the cauliflower into small pieces.

  2. Heat a cast iron or regular skillet.

  3. Add 2 teaspoons coconut oil or alternative oil.

  4. Cook the cauliflower with paprika, garlic, salt, and pepper for 7-10 minutes, stirring occasionally.

  5. Turn off the heat and top with desired toppings such as cheese, black beans, tomatoes, salsa, avocado, cilantro, green onions, jalapeño, and pickled onions.
