Quick No-Cook Raw Mango Pickle

Ingredients

  • 2 raw mangoes
  • onion (in 2:1 ratio with mangoes or equal parts)
  • 1 teaspoon salt
  • 2 teaspoons coriander powder
  • 1.5 teaspoons red chili powder
  • 1/4 cup jaggery

Preparation

  1. Chop 2 raw mangoes into small pieces.

  2. Add chopped onion in a ratio of 2 parts mango to 1 part onion or equal parts.

  3. Add 1 teaspoon salt.

  4. Add 2 teaspoons coriander powder.

  5. Add 1.5 teaspoons red chili powder.

  6. Add 1/4 cup jaggery.

  7. Mix all the ingredients together in a bowl.

  8. Cover the bowl and let it sit for 15 to 30 minutes until the jaggery melts.

Notes

  1. This instant no-cook pickle is ideal for summer or when fresh vegetables are unavailable.

  2. It pairs well with dal and rice, roti, or as a side dish with other meals.
