Quick No-Cook Raw Mango Pickle
Ingredients
- 2 raw mangoes
- onion (in 2:1 ratio with mangoes or equal parts)
- 1 teaspoon salt
- 2 teaspoons coriander powder
- 1.5 teaspoons red chili powder
- 1/4 cup jaggery
Preparation
Chop 2 raw mangoes into small pieces.
Add chopped onion in a ratio of 2 parts mango to 1 part onion or equal parts.
Add 1 teaspoon salt.
Add 2 teaspoons coriander powder.
Add 1.5 teaspoons red chili powder.
Add 1/4 cup jaggery.
Mix all the ingredients together in a bowl.
Cover the bowl and let it sit for 15 to 30 minutes until the jaggery melts.
Notes
This instant no-cook pickle is ideal for summer or when fresh vegetables are unavailable.
It pairs well with dal and rice, roti, or as a side dish with other meals.
