Quick Tortellini Alla Crudaiola Salad
Ingredients
- 150 g cherry tomatoes
- 1 small yellow zucchini
- 100 g chanterelle mushrooms
- 1/2 red bell pepper
- Fresh basil
- 100 g black olives with 2 tbsp oil
- Optional: Zucchini blossoms
- 250 g fresh tortellini
- Salt and pepper to taste
Preparation
Cut the vegetables and place them in a large bowl.
Cook the tortellini al dente and drain.
While still warm, mix with the raw vegetables.
Add basil, olives with oil, and zucchini blossoms.
Season with olive oil, salt, and pepper to taste.
