Arabian Meat and Vegetable Stew

Ingredients

  • 1 kg meat
  • 2 tablespoons ghee
  • 2 onions
  • 4 cloves garlic
  • 1 tablespoon ginger
  • 3 tomatoes
  • 2 green peppers
  • 1/2 cup tamarind
  • 3 tablespoons tomato paste
  • 1 tablespoon salt
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon cardamom
  • 1 teaspoon cinnamon
  • 2 bay leaves
  • 1 carrot
  • 2 potatoes
  • 2 zucchinis

Preparation

  1. Wash the meat well and place it in a strainer to drain.

  2. Sprinkle a little black pepper on the meat.

  3. In a pot, heat the ghee and fry the meat on all sides until golden brown, then remove it from the pot.

  4. In the same pot, add the onion and stir until wilted.

  5. Add the garlic and ginger, and stir until dark in color.

  6. Add the tomato and stir to absorb flavors, then add the green pepper.

  7. Add the tamarind, tomato paste, salt, pepper, cumin, coriander, cardamom, cinnamon, and bay leaves.

  8. Add the meat back and stir to mix well, then add a little water to cover the meat.

  9. Cover the pot and leave on medium heat until the meat is almost cooked.

  10. Add the carrot, potatoes, and zucchini, and add more water if needed. Cover and leave until the vegetables are cooked, then serve with rice or flatbread.
