Creole Beef and Vegetable Stew
Ingredients
- Beef steak (such as chorizo cut, quadril, or other cuts like costaletas, bocado, or aguja parrillera)
- Bell pepper
- Onion
- Carrot
- Potatoes
- Peas
- Eggs
- Parsley
- Garlic
- Chopped chili
- Oregano
- Salt and pepper
- Wine
- Broth or water
Preparation
Brown the beef in a large pot over medium heat.
Add chopped onions, bell peppers, carrots, and potatoes to the pot and sauté until softened.
Season with garlic, chopped chili, oregano, salt, and pepper.
Pour in wine and broth or water, then bring to a simmer.
Add peas and continue simmering until all ingredients are tender.
Optionally, fry eggs separately and serve on top of the stew.
