Hearty Lentil Stew with Smoked Meats

Ingredients

  • 200g smoked pancetta
  • 2 Candelario-style chorizos
  • 200g pork loin
  • 2 onions
  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 2 garlic cloves
  • 1 can chopped tomato
  • 1 glass of wine
  • 1 glass of broth or water (add if necessary)
  • 500g lentils
  • Potatoes and carrots

Preparation

  1. Brown the pancetta and chorizo in a large pot over medium heat.

  2. Add onions, garlic, red bell pepper, and green bell pepper, then sauté until softened.

  3. Stir in the chopped tomato, wine, broth or water, and lentils.

  4. If using Turkish lentils, add potatoes and carrots immediately and simmer for about 10 minutes until tender.

  5. Serve the stew hot.

Tips

  1. If overcooked, the lentils may break down but will still taste delicious.
