Asian-Inspired Fondant Potatoes Dish

Ingredients

  • 2 large potatoes
  • 2 tbsp butter
  • lots of garlic
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1/2 tbsp spicy bean paste (dou ban jiang)
  • 1/4 tsp sugar
  • 1 tsp corn starch
  • 1.5 cups chicken stock
  • red chili peppers
  • fresh rosemary and thyme

Preparation

  1. Peel and cut the potatoes in cylinder shapes using a cookie cutter

  2. Score the potatoes on both sides

  3. On a hot skillet with oil, sear the potatoes on both sides until golden brown

  4. Add 2 tablespoons of butter to one side of the pan then pour in garlic and red chilies. Let it cook for 2 minutes until fragrant

  5. Add the seasoning: soy sauce, oyster sauce, sugar, corn starch, and chicken stock. Then top with fresh rosemary and thyme for additional aroma

  6. Simmer on medium low heat until potatoes are fork tender and golden

Tips

  1. Use a hybrid pan like Hexclad for best searing and to prevent sticking during cooking.
