Banana Bread Baked Oat Cakes

Ingredients

  • 1 banana
  • 3/4 cup oats
  • Just under 3/4 cup plant milk
  • 1/2 tsp cinnamon
  • 1/4 tsp mixed spice

Preparation

  1. Preheat the oven to 180 degrees.

  2. Peel the banana and pop it in a bowl. Mash the banana up using the back of a fork.

  3. Add all the remaining ingredients to the bowl, then mix together.

  4. Grab a muffin tray and grease three or four of the moulds with some margarine.

  5. Scoop the oat mixture into the greased mould and bake for 18 minutes.

  6. Run a sharp knife around the top edge of each cake. Place a plate on top of the muffin tin, flip it over onto the plate, tap the bottom of the tray to release the cakes, and turn them upside down to eat immediately.

Tips

  1. The cakes are best eaten straight out of the oven as they are still a bit squishy inside.
