Blueberry S’mores Mug Cake

Ingredients

  • 1 egg
  • 1/2 tbsp. olive oil
  • 2 tbsp. mashed blueberries {i used frozen wild blueberries & thawed before mashing; also make sure to mash then measure.}
  • 3 tbsp. gluten free all purpose flour
  • 1/4 tsp. baking powder
  • 1 tbsp. coconut sugar
  • 1 tbsp. chocolate chips
  • marshmallows

Preparation

  1. In a microwavable mug, whisk together the egg, olive oil, and mashed blueberries

  2. Stir in the rest of the ingredients {except the marshmallows} & microwave for 45 seconds

  3. Top with small marshmallow pieces and microwave for an additional 15 seconds

  4. Enjoy!
