Blueberry S’mores Mug Cake
Ingredients
- 1 egg
- 1/2 tbsp. olive oil
- 2 tbsp. mashed blueberries {i used frozen wild blueberries & thawed before mashing; also make sure to mash then measure.}
- 3 tbsp. gluten free all purpose flour
- 1/4 tsp. baking powder
- 1 tbsp. coconut sugar
- 1 tbsp. chocolate chips
- marshmallows
Preparation
In a microwavable mug, whisk together the egg, olive oil, and mashed blueberries
Stir in the rest of the ingredients {except the marshmallows} & microwave for 45 seconds
Top with small marshmallow pieces and microwave for an additional 15 seconds
