Homemade Vegan Pretzel Bagels
Ingredients
Yeast mixture
- 1 tbsp active dry yeast
- 1/4 cup warm water
- Pinch of sugar
Dough
- Yeast mixture
- 2+1/4 cups all purpose flour
- 1/2 tsp salt
- 1 tbsp sugar
- 3/4 cup warm water
Baking soda bath
- 5 cups water
- 1/4 cup baking soda
Toppings
- Coarse or flakey salt
- 1/3 cup vegan butter
Preparation
Activate the yeast by dissolving it with sugar in warm water and let it sit until foamy.
In a large bowl, combine the flour, salt, and sugar, then add the yeast mixture and additional warm water to form a dough.
Knead the dough until smooth and elastic, then cover and let it rise in a warm place until doubled in size.
Prepare the baking soda bath by bringing water to a boil and dissolving baking soda in it.
Shape the dough into bagel forms and dip each one briefly in the baking soda bath.
Place the bagels on a baking sheet, sprinkle with coarse salt, and bake until golden brown.
Brush the baked bagels with melted vegan butter for flavor and shine.
