Homemade Vegan Pretzel Bagels

Ingredients

Yeast mixture

  • 1 tbsp active dry yeast
  • 1/4 cup warm water
  • Pinch of sugar

Dough

  • Yeast mixture
  • 2+1/4 cups all purpose flour
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 3/4 cup warm water

Baking soda bath

  • 5 cups water
  • 1/4 cup baking soda

Toppings

  • Coarse or flakey salt
  • 1/3 cup vegan butter

Preparation

  1. Activate the yeast by dissolving it with sugar in warm water and let it sit until foamy.

  2. In a large bowl, combine the flour, salt, and sugar, then add the yeast mixture and additional warm water to form a dough.

  3. Knead the dough until smooth and elastic, then cover and let it rise in a warm place until doubled in size.

  4. Prepare the baking soda bath by bringing water to a boil and dissolving baking soda in it.

  5. Shape the dough into bagel forms and dip each one briefly in the baking soda bath.

  6. Place the bagels on a baking sheet, sprinkle with coarse salt, and bake until golden brown.

  7. Brush the baked bagels with melted vegan butter for flavor and shine.
