Vegan Cinnamon Poppy Seed Pancakes

Ingredients

  • 1 1/2 cups plain flour
  • 1 TBSP baking powder
  • 2 TSP cinnamon
  • 1 TBS poppy seeds
  • 1 TBS antioxidant blend
  • 1 1/2 cup almond milk
  • 3 TBSP maple syrup
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar

Preparation

  1. Mix dry ingredients (flour, baking powder, cinnamon, poppy seeds, antioxidant blend) in a bowl

  2. Mix wet ingredients (almond milk, maple syrup, vanilla extract, apple cider vinegar) in another bowl

  3. Combine wet and dry ingredients to form a batter, stirring until just mixed

  4. Heat a non-stick pan or griddle over medium heat and lightly grease if necessary

  5. Pour batter onto the pan to form pancakes and cook until bubbles appear on the surface, then flip and cook until golden brown

  6. Stack the cooked pancakes to create a tower and top with coconut yogurt as desired
