Banana Oat Milk Pancakes with Blueberries

Ingredients

  • 2 mushed bananas
  • 1 tsp cinnamon
  • 500ml oat milk
  • 2 tsp baking powder
  • 200g plain flour
  • Juice of half a lemon
  • Some blueberries

Toppings

  • Walnuts
  • Maple syrup

Preparation

  1. Whisk together the mushed bananas, cinnamon, oat milk, baking powder, plain flour, and lemon juice.

  2. Add some blueberries to the mixture and stir.

  3. Heat a pan or griddle over medium heat and cook the batter in portions until bubbles form and edges are set, then flip and cook until golden brown on both sides

  4. Serve the pancakes with added walnuts and maple syrup
