Vegan Scrambled French Toast

Ingredients

  • 1/2 mashed banana
  • 1 tbsp chia
  • 1/2 cup plant milk
  • 1/2 tsp vanilla extract
  • 1 tsp maple syrup (optional)
  • Dash of cinnamon
  • 2-3 slices bread

Preparation

  1. Mix all the ingredients except the bread and let it sit for at least 5 minutes.

  2. Chop the bread into bite-size chunks and put them on a non-stick pan.

  3. Pour the batter on the bread, mix and fry for about 5-10 minutes until crispy and brown.

  4. Serve with some maple syrup, nut butter and a glass of warm milk and enjoy.
