Baked Vanilla Donuts with Pink Pitaya Icing
Ingredients
- 1 1/2 cup all purpose flour
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1 cup oat milk
- 4 tbsp cane sugar
- 1 tbsp apple cider vinegar
- 1/3 cup soya yogurt
- 2 tsp vanilla extract
- 1/3 cup melted coconut oil
Icing components
- Pink pitaya powder
- Icing sugar
- Lemon juice
Drizzle components
- Cocoa butter
- Pink pitaya powder
Preparation
Mix all dry ingredients in one bowl.
In another bowl, mix all wet ingredients.
Add the wet ingredients to the dry ingredients and mix well to combine.
Fill greased donut molds with the batter using a spoon or piping bag.
Bake in a preheated oven at 175°C for around 10 minutes.
Check with a skewer and ensure there is no raw dough on it.
Let the donuts cool down completely before adding the icing.
Icing
Mix pink pitaya powder with icing sugar and lemon juice to make the icing.
Decoration
Make a drizzle with cocoa butter and pink pitaya powder.
Decorate with homemade granola.
