Chia and Almond Raw Cheesecake Bars

Ingredients

Base

  • 155g (1 1/2 cups) @paleofoodsco chia and almond Granola
  • 2 Tbsp Coconut Oil

Filling

  • 100g (3/4 cup) Cashew Nuts (soaked for at least an hour in water)
  • 60g (1/2 cup) Salted Caramel Protein (or vanilla)
  • 2 Tbsp Fruit Syrup (@sweetfreedomuk)
  • 50ml Almond Milk

Topping

  • 35g (1/4 cup) Dark Chocolate (@before.chocolate)

Preparation

  1. Blend together the granola with the melted coconut oil

  2. Press this mixture into a square lined tin

  3. Blend together the filling ingredients and place on top of the base. Place in the fridge while you melt the chocolate

  4. Melt the dark chocolate in the microwave for 20 seconds burst until melted.

  5. Pour over the filling and then place in the freezer for around 2 hours to set before slicing into squares.
