Guacamole Kale Salad with Onions and Tomatoes
Ingredients
- 16 oz Nature’s Greens Kale
- Juice of 1 lemon
- 8 oz guacamole
- 1 tsp red pepper flakes
- 4 oz diced red onion
- 3 cups tomatoes, diced
- 1 tbsp garlic, minced
- 1 tbsp cumin
- Himalayan Salt & Black Pepper, to taste
- OPTIONAL: 1 tsp cayenne pepper (for spicy note)
Preparation
Mix all ingredients in a large salad bowl.
Let the salad sit for 30 minutes to allow flavors to fuse together.
Kale is high in fiber and water, which help prevent constipation and promote regularity and a healthy digestive tract. It also contains B vitamins and vitamin C, which promotes iron absorption.
