Healthy Nut Butter Cookie Sandwiches
Ingredients
- 1/2 cup natural peanut butter
- 1/4 cup maple syrup
- 2 tsp vanilla extract
- 1/2 cup almond meal
- 3 tbsp cacao powder
- pinch of sea salt
- 1/2 tsp baking powder
Filling
- 1/4 cup peanut butter
- 2 tbsp coconut butter
- 1 tbsp maple syrup
Preparation
Preheat oven to 170°C / 350°F.
Mix together peanut butter, maple syrup and vanilla.
Fold in almond meal, cacao, salt and baking powder.
Roll dough into a teaspoon size ball, use a fork and press down gently on a piece of baking paper.
Bake cookies for 10-15 minutes.
Once fully cooled, stir together 1/4 cup peanut butter, 2 tablespoons coconut butter and 1 tablespoon maple syrup. Stuff 2 cookies and press together.
