Healthy Nut Butter Cookie Sandwiches

Ingredients

  • 1/2 cup natural peanut butter
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract
  • 1/2 cup almond meal
  • 3 tbsp cacao powder
  • pinch of sea salt
  • 1/2 tsp baking powder

Filling

  • 1/4 cup peanut butter
  • 2 tbsp coconut butter
  • 1 tbsp maple syrup

Preparation

  1. Preheat oven to 170°C / 350°F.

  2. Mix together peanut butter, maple syrup and vanilla.

  3. Fold in almond meal, cacao, salt and baking powder.

  4. Roll dough into a teaspoon size ball, use a fork and press down gently on a piece of baking paper.

  5. Bake cookies for 10-15 minutes.

  6. Once fully cooled, stir together 1/4 cup peanut butter, 2 tablespoons coconut butter and 1 tablespoon maple syrup. Stuff 2 cookies and press together.
