Raw Chocolate Raspberry Cake

Ingredients

  • 200 g soft pitted dates
  • 50 ml water
  • 100 g hazelnuts
  • 1/2 cup coconut chips
  • 2 tbsp raw cacao powder
  • Sea salt flakes to taste
  • Bourbon vanilla powder to taste
  • 2 heaped tbsp date paste
  • 3 tbsp melted coconut oil
  • ~1 1/4 cups soaked cashews
  • the rest of the date paste
  • ~1/2 cup melted coconut oil
  • ~3/4 cup raw cacao powder
  • Sea salt flakes to taste
  • Bourbon vanilla powder to taste
  • ~100-200 ml water
  • 2 tbsp maple syrup

Preparation

  1. Process the crust ingredients in a food processor and add to the cake form.

  2. Blend the filling ingredients in a high speed blender and add to the form.

  3. Refrigerate the cake overnight and top with frozen raspberries.
